Raisin drop cookie recipe with orange flavor and butter.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup butter, softened
  • 3 eggs, beaten
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups raisins
  • 2 tablespoons orange zest or grated orange peel

Preparation:

Preheat oven to 375°. Grease 2 large baking sheets.

Into a large bowl, measure flour, sugar, butter, eggs, baking powder, salt, and vanilla. Beat at low speed of electric mixer until blended. Increase to high speed and beat for 2 minutes, scraping sides and bottom of bowl occasionally. Stir in the raisins and orange zest.

Drop batter by heaping tablespoonfuls, about 2 inches apart, onto prepared baking sheets. Bake 15 minutes or until cookies are browned. Remove cookies to wire racks to cool. Store in tightly covered containers.
Makes about 2 1/2 dozen cookies.
