Jubilee Jumbles

This basic jumble cookie is made with shortening and nuts, but you can add or substitute chocolate chips, coconut, raisins, or other extras.

Cook Time: 10 minutes

Ingredients:

  • 1/2 cup shortening
  • 1 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 cup evaporated milk, undiluted
  • 1 teaspoon vanilla
  • 2 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped pecans or walnuts

Preparation:

Cream shortening and sugar; beat in eggs. Stir in milk and vanilla. Combine flour, salt, soda and nuts, then stir into batter. Chill for 1 hour. Drop by rounded teaspoonfuls 2 inches apart on a greased baking sheet. Bake at 350 degrees for about 10 to 12 minutes.

Variation: Substitute 1 cup of raisins, coconut, or chocolate chips for the nuts.
Makes about 5 dozen Christmas cookies.

"I lost this receipe years ago and was so glad to find it again. I live in a home full of fussy people that it's like pulling hen's teeth to get them to try something new. They tried them and now there are only a few left. I just made them last evening. I used chocolate chips. Next time I shall try using maple flavoring and walnuts and maybe butterscotch chips. They're good with chopped dates too!"
