Great cheese biscuits with dry mustard, parsley, and cheddar cheese.

Cook Time: 20 minutes

Ingredients:

  • 2 cups all-purpose flour, sift before measuring
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 3 tablespoons butter
  • 2/3 cup shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley
  • 3/4 cup milk plus a little milk for brushing tops

Preparation:

Sift together flour, baking powder, salt, and dry mustard; cut in butter. Stir in shredded cheese, 2 tablespoons chopped parsley, and milk. Mix together lightly with a fork, just until moistened. Turn dough out onto a floured surface and knead gently a few times, until smooth. Roll out about 3/4-inch thick and place on a greased and floured baking sheet. Brush tops with milk; bake at 450° 15 to 20 minutes, until browned.
Makes 1 dozen cheese biscuits.

"This recipe was simple to follow and made a great biscuit. I served them hot out of the oven with butter and sausage gravy from scratch. I used dry parsley due to lack of availability of fresh, about two pinches. I also added about a quarter of a cup more cheese, because I prefer my biscuits cheesy. I have a convection oven and they were done in fifteen minutes. The milk gave a gorgeous colour to the tops. I used a large biscuit cutter and it made eight biscuits, I rolled them 1/2 inch thick and then baked them up. Next time I think I will double the recipe. Wonderful old fashioned hot biscuits. They were a big hit at the breakfast table this morning!. (Canada)"
