Shrimp With Basil and Linguine

Cook Time: 20 minutes

Ingredients:

  • 2 ounces chopped basil leaves (clean basil and remove thick stems, let dry)
  • 8 ounces butter, softened
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 tablespoons grated Parmesan cheese
  • 1 pound linguine
  • 1 pound medium shrimp, shells removed, cleaned
  • freshly grated Parmesan cheese

Preparation:

Place chopped basil in food processor with blade attachment; process until finely chopped. It might be necessary to process in 2 batches. Remove from processor and set aside. Place butter in small mixing bowl. Using an electric mixer, whip butter. Add minced garlic, salt, pepper, Parmesan cheese, and basil; mix until well combined.

Cook pasta according to package directions, drain well and keep warm.

Melt basil butter in large skillet over medium heat. Add shrimp and sauté for about 3 minutes, just until cooked through. Serve over hot cooked pasta. Pass freshly grated parmesan cheese.
Serves 4.
