Creole Corn Muffins

Ingredients:

  • 1 1/2 cups sifted flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 3/4 cup yellow corn meal
  • 1 egg, well beaten
  • 1 cup milk
  • 1/4 cup melted shortening
  • 1 tablespoon finely chopped green pepper
  • 1 to 2 teaspoons finely chopped onion
  • 1/2 cup grated Cheddar cheese

Preparation:

Sift flour with baking powder, salt and sugar; add corn meal and blend well. Combine beaten egg, milk and melted shortening. Vigorously stir liquids into dry ingredients until all flour is dampened. Add green pepper, onion, and shredded cheese. Pour batter into greased muffin pans. Bake at 400° for 25 to 30 minutes.
Makes 12.

"In the past, whenever I had attempted to make cornbread/corn muffins the results were disastrous! I always ended up with 1/2-3/4 of an inch at the bottom that was completely burnt and an all together dry muffin. I thought I'd give it one last shot with these muffins and a few adjustments. I greased my muffin tins VERY thoroughly and I baked them at 375 degrees, checking them frequently. I took them out when the tops bounced back after touching them... which ended up being 12-14 minutes. (I can't even imagine the result if I had cooked them at 400 degrees for 20-25 minutes) I also used chopped chives and a little extra cheese and the results were WONDERFUL, I served them at a house party and they barely lasted ten minutes"
