Cook Time: 25 minutes

Total Time: 25 minutes

  • 2 cups corn meal
  • 1/3 cup melted shortening
  • 1/2 tablespoon salt

  • 1/2 teaspoon baking soda
  • 3/4 cup buttermilk or milk
  • 1 small can (8 ounces) cream-style corn
  • 1 can chopped green chile peppers (4 oz)
  • 1 cup of shredded cheddar cheese

Preheat oven to 425°. Mix corn meal, shortening, salt, sugar, eggs, soda and milk. Add corn and chile peppers. Pour half of mixture in large, greased 9-inch pan. Went over well!, Member Melvin_Barnett

I fixed this dish to go with some Baby Lima Beans and Ham. Only thing I changed was doing self-rising flour and corn meal so I dropped the soda and powder. Great texture, great taste not to sweet not too much peppers.
