An easy corn pudding from our forum. Corn pudding recipe.

Ingredients:

  • 3 Lg. Eggs
  • 1 1/8 cups eveporated milk
  • 3 cups creamed corn
  • 3 tblsp. Butter
  • 3 tblsp. Brown sugar
  • 3 tblsp. corn starch mixed in 3 tblsp water
  • 3/4 tsp. ground nutmeg
  • 3/8 tsp. salt
  • 3/8 tsp. pepper

Preparation:

Pre-heat oven to 350°. Butter a 2-quart baking dish. Beat eggs and milk in a large bowl; stir in remaining ingredients and pour mixture into the prepared baking dish. Bake 45 minutes, or until slightly browned and a knife inserted near center comes out clean.
Serves 4.

WARNING!!! Recipe needs some serious tweaking!April 19, 2009By keolaokekai808
"I made this recipe this evening and followed the directions and measurements exactly. After 45 minutes in the oven it was pretty much hot corn soup. After AN HOUR AND A HALF in the oven I took it out and let it cool hoping it would become the consistency it's supposed to be, and it firmed a bit, but it was still really watery. I would suggest cutting down on the amount of butter, DRAINING THE CREAMED CORN (which would've been nice to know!!), and adding at least one more tblsp of cornstarch. If you don't make these adjustments then you end up with barely congealed corn soup and a hungry, aggravated family!"
