Ingredients:
- 3 Rock Cornish game hens, halved
- 1 1/4 teaspoons salt
- 1/2 cup butter or margarine
- 1 1/2 cups orange juice
- 2 tablespoons grated orange peel
- 2 tablespoons finely minced onion
- 1/2 teaspoon ground, ginger
- 1/4 teaspoon Tabasco sauce
- 4 teaspoons cornstarch
- 1/4 cup toasted slivered almonds, optional
- 2 oranges, peeled and sectioned
Preparation:
Rinse rock cornish game hens and pat dry. Sprinkle halves with salt. Heat butter in large skillet. Add game hen halves three at a time; brown on both sides, removing as browned. Return all halves to skillet; add orange juice and peel, onion, ginger, and Tabasco sauce. Simmer, covered, for 20 to 25 minutes, or until tender. Arrange Cornish game hen halves on heated platter; keep warm while thickening sauce.
Blend cornstarch with a little cold water; stir into sauce in skillet. Cook, stirring constantly, until mixture thickens and comes to a boil. Add almonds and orange sections; heat through. Spoon a little sauce over the hens; serve remaining sauce in a bowl. Serve Cornish hens with rice and garnish with more orange sections, if desired.
