These delicious Cornish game hens make a tasty and easy everyday meal, or serve them for a weekend dinner. Serve these hens with rice and a side vegetable or tossed salad.

Prep Time: 10 minutes

Cook Time: 1 hour, 15 minutes

Total Time: 1 hour, 25 minutes


  • 4 cornish game hens
  • salt and pepper
  • 4 to 6 tablespoons prepared pesto
  • 2 tablespoons olive oil


Heat oven to 350°.

Wash hens and pat dry. Sprinkle with salt and pepper Place on a rack in a roasting pan, breast side up. Rub about 1 teaspoon of the pesto between the skin and breast on both sides of a hen, then rub about 1 teaspoon of pesto over the skin, along with about 1 teaspoon of olive oil. Repeat with remaining pesto and Cornish game hens. Roast for about 1 hour to 1 hour and 15 minutes, or until an instant read thermometer registers 180° in the thickest part of meat. Baste frequently with pan juices.

Serve with rice and a side vegetable or tossed salad.
Serves 4.

The cornish hens were awesome!! I turned it on its breast the lat 5 minutes on boil 400 and talk about a crispy hen. The only downfall for me is making the pesto, it took me a bit long to make it and very messy job. But like what my hubby tells me ""It will be good since theres a mess.""
