Pork Kabobs

Pork kabobs are grilled after marinated with tomato juice and green onions.

Ingredients:

  • 1 1/2 pounds country style pork ribs, boneless, cut in cubes
  • 1 cup tomato juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 teaspoon dried marjoram
  • 3 green onions, sliced
  • 1 tablespoon minced fresh ginger root or 1 teaspoon dried ground ginger

Preparation:

Place pork in a large food storage bag or non-reactive dish; combine remaining ingredients and pour over pork cubes. Turn to coat well. Seal bag or cover dish with plastic wrap or foil. Refrigerate for 2 to 4 hours, turning frequently to keep coated with the marinade.

Put cubes on skewers, leaving a little space between each cube. Place on a hot grill; baste with the sauce and turn frequently. Pork should be done in 25 to 35 minutes, depending on heat.
Grilled Pork Kabobs serves 4.
