Ingredients:

  • 3/4 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 1 teaspoon ground ginger
  • 1 tablespoon honey
  • 4 cloves garlic, minced
  • 1 teaspoon ground allspice
  • 2 teaspoons grated orange peel
  • 1 small hot red chile pepper, seeded and crumbled, or about 1/2 teaspoon crushed red pepper
  • 1 bunch green onions, about 6 to 8, sliced, with green
  • 2 to 3 pounds boneless country style pork ribs, trimmed

Preparation:

In a small bowl, mix together the hoisin sauce, soy sauce, sherry, ginger, honey, garlic, allspice, orange peel, and red chile pepper. Place 1/3 of the green onions in a 3 1/2- to 5-quart slow cooker. Top with some of the pork ribs and spoon some of the sauce on the meat. Repeat these layers 2 more times, ending with the remaining sauce. Cover and cook on low 9 to 10 hours, or until tender. Serves 6.

I followed this recipe and came home to the smell of burnt ribs. Not exactly what slow cooking is supposed to be about. I use my slow cooker all the time because I enjoy that it saves time preparing dinner after a hard day at work. This was the first recipe I tried where the food actually burned. Apparently, there was not enough moisture in this recipe to keep the food from burning. I had to throw out 3 pounds of meat---what a waste of money and good ingredients. I strongly suggest adding water or broth to keep these ribs moist, or just not using a slow cooker at all. These would have been good had I prepared them on the grill or in the oven and then basted them with the sauce. At least then we would have been able to eat them instead of tossing them in the trash.
