The crab is wonderful with summer vegetables. An easy, but delicious light
meal for warm days.
Note: Many chain, club, and specialty stores sell crab meat refrigerated in 1-pound cans for about $10.00. While it is not the same as freshly cooked and cracked crab, it is good. Especially for a salad or dish in which it is mixed with many other ingredients. The price of $10.00 for one pound of crab meat with no shells, etc. is considered quite a reasonable price.
Yield: Serves 6
Ingredients:
- 2 cups chopped cucumber
- 2 cups chopped seeded tomatoes
- 1 cup chopped green bell pepper (1 medium)
- 1 cup chopped red onion (1 medium)
- 1 pound crabmeat
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 1 tablespoon fresh lemon juice
- 3/4 teaspoon salt
- 1/2 teaspoon white pepper
- 1/4 cup chopped fresh parsley
Preparation:
Combine all ingredients and toss gently, but well.
Serve with French bread and a green salad for a complete, but easy dinner.
