Cranberry Cornmeal Torte

Ingredients:

  • 3/4 cup sugar
  • 3/4 cup butter, softened
  • 1 tablespoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1 1/4 teaspoons baking powder
  • 3/4 cup fresh or frozen cranberries

Preparation:

Heat oven to 350°. Grease and flour a 9-inch springform pan. In large bowl, combine sugar, margarine, vanilla and egg; beat until well blended.

Lightly spoon flour into measuring cup; level off. Stir flour, cornmeal and baking powder into first mixture until well mixed. Spoon into prepared pan. Sprinkle with cranberries and press in lightly.

Bake for 40 to 45 minutes or until edges are golden brown. Place on wire rack to cool completely.

Serve torte with whipped topping or sweetened whipped cream. Makes 10 to 12 servings.

This torte is very unusual. It is also very easy and quick to prepare. I received many compliments and many inquires as to what it was when I served it as a finishing touch at a luncheon. It created a lot of couriosity and conversation and attention. I will make a light pudding sauce to serve over it with a mint leaf and a fresh cranberry next time.
