Brown sugar is used for a plethora of things. Whether it be to top off the melting butter on piping hot sweet potatoes or used to sweeten up your favorite sauces or marinades, it's commonly found in many recipes. Put your brown sugar to good use and make a delicious brown sugar pie.

This brown sugar pie is baked with a meringue topping. You might also finish it with a whipped cream topping. This is a delicious dessert for any occasion. Pair it with your favorite hot drink as you unwind after the main course with your friends and family on Christmas or Thanksgiving.

Ingredients

  • 1 cup brown sugar, firmly packed

  • 1/4 teaspoon salt

  • 2 tablespoons water

  • 2 cups cold milk

  • 4 tablespoons cornstarch

  • 2 large egg yolks, slightly beaten

  • 2 tablespoons butter

  • 1/2 teaspoon vanilla extract

  • 1 baked pie crust

For the Meringue:

  • 2 large egg whites

  • 4 tablespoons brown sugar

  • 1/2 teaspoon vanilla extract

Steps to Make It

  1. Combine brown sugar, salt, and water in a saucepan or top pan of a double boiler.

  2. Boil over medium heat to a thick syrup (about 5 minutes).

  3. If you are not using the top pan of a double boiler, transfer the syrup to a pan or bowl which can serve as the top of a double boiler.

  4. Heat about 1 to 2 inches of water in the bottom of the double boiler over medium heat until the water is hot.

  5.  Mix 1/4 cup milk and cornstarch to a thin paste.

  6. Add 1 3/4 cups milk; pour into the hot syrup and cook, stirring, over hot water until thick and smooth, then cook 15 minutes longer, stirring constantly.

  7. Stir a small amount of mixture into beaten egg yolks, return to the double boiler, and cook a few minutes longer.

  8. Add butter and vanilla and stir until blended. Cool the filling slightly and pour it into a baked pie shell. 

  9. Heat the oven to 325 F.

  10. While the pie filling is cooling, beat the egg whites until they hold stiff peaks.

  11. Add the 4 tablespoons of brown sugar gradually, beating constantly. Add vanilla.

  12. Pile the meringue lightly on filling, spreading to the crust.

  13. Bake at 325 F for about 20 minutes, or until firm and lightly browned.

  14. Serve and enjoy!
