Caramel Pie Recipe

This caramel pie is baked with a meringue topping, but could be served with a whipped cream topping as well.

Ingredients:

  • 1 cup brown sugar
  • 3 eggs, separated
  • 5 tablespoons flour
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1 pie shell, 9-inch, baked
  • 1/3 cup sugar, for meringue
  • 1/4 teaspoon cream of tartar

Preparation:

Beat egg yolks; add milk. Mix flour with sugar. Add butter and vanilla. Combine all ingredients and cook in double boiler until thick, stirring constantly. Pour filling into baked pie shell.

Prepare meringue. Beat egg whites and cream of tartar until frothy. Gradually add 1/3 cup sugar and continue beating until stiff peaks form. Spread meringue over the hot filling, spreading right  to the crust. Bake at 400° for 10 minutes, or nicely until the meringue is nicely browned.

Amazingly good, Member forkliftjones

This was the best pie I've ever made. It did taste a bit too much like flour, so I added some corn syrup and more brown sugar.
