Use deli sliced corned beef, canned corned beef, or your own home cooked corned beef in this crockpot Reuben casserole.

Ingredients:

  • 1 can (16 ounces) sauerkraut, undrained
  • 1 can (12 ounces) corned beef, sliced, or use deli or home-cooked sliced corned beef
  • 2 cups Swiss cheese, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Thousand Island dressing
  • 2 fresh tomatoes, sliced
  • 2 tablespoons melted butter
  • 1/2 cup soft rye bread crumbs, or pumpernickel

Preparation:

Place sauerkraut in the bottom of slow cooker. Top with a layer of beef, then cheese. Combine both mayonnaise and dressing; spread over cheese. Top with tomato slices. Cook on high 4 to -6 hours. Sauté bread crumbs in butter and sprinkle on casserole before serving.

Great!May 12, 2008By turbomutt
"Another Excellent Recipe. Family loved it. I thought that the 4-6 hours on high might be a quit much so I cooked it 6 hours on low and it turned out perfect."
