Ingredients:
- 4 pounds corned beef brisket (you might have to cut in half to fit in crockpot)
- water
- 1/2 cup chopped onion
- 2 cloves garlic, finely minced
- 2 bay leaves
- 1 head cabbage, cut into wedges
Preparation:
Placed corned beef in crockpot; add water to barely cover. Add onion, garlic and bay leaves. Cover and cook on LOW for 9 to 10 hours. To cook cabbage, place cabbage wedges in a large covered saucepan or Dutch oven. Add about an inch of water, 1 teaspoon salt, and 1 or 2 tablespoons lemon juice. Cover and boil for about 10 minutes, until wedges are tender. Serve cabbage with sliced corned beef and other cooked vegetables.Serves 8.
