  • salt and pepper, to taste
  • 4 to 6 cups hot cooked rice
  • 1 cup chopped green onions

In crockpot, combine beans with ham bone, onion, garlic, and 1 1/2 quarts water. Cover and cook on high 2 hours. Turn heat to low and cook, covered, 10 to 12 hours. Great Red Beans and Rice, Member braychuck

I have tried this recipe several different ways and found it easier to change things that work best for me. 1. I replaced water with vegetable broth and the bone in concept with buying a pre-cooked ham, 1 lb and then cut it onto small chunks when the recipe calls for taking out the bone. 2. I noticed that the rice didn't have the red bean/ham flavor when cooked as a stand alone recipe so at the 11th hour I added the dry rice and instead of using water I used vegetable broth into the crockpot. When I did all this I got rave reviews from my guests from Switzerland and San Antonio TX. Definitely a re-do.
