Crockpot Red Beans and Rice

Easy red beans and rice, cooked in the slow cooker. Scroll down to see more beans and rice.

Cook Time: 10 hours

Ingredients:

  • 1 ham bone, cracked
  • 1 pound small dried red beans, soaked overnight and drained
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • salt and pepper, to taste
  • 6 cups hot cooked rice
  • 1 cup chopped green onions

Preparation:

In crockpot, combine beans with ham bone, onion, garlic, and 1 1/2 quarts water. Cover and cook on high 2 hours. Turn heat to low and cook, covered, 10 to 12 hours. Remove ham bone and mash some of the beans against the side of the pot to thicken the remaining liquid. Remove meat from bone and return meat to pot.
Season with salt and pepper and serve with rice, topped with chopped green onions.
Serves 8 to 10.

"I have tried this recipe several different ways and found it easier to change things that work best for me. 1. I replaced water with vegetable broth and the bone in concept with buying a pre-cooked ham, 1 lb and then cut it onto small chunks when the recipe calls for taking out the bone. 2. I noticed that the rice didn't have the red bean/ham flavor when cooked as a stand alone recipe so at the 11th hour I added the dry rice and instead of using water I used vegetable broth into the crockpot. When I did all this I got rave reviews from my guests from Switzerland and San Antonio TX. Definitely a re-do."
