Ingredients:

  • 1 1/2 pounds dried pinto beans, cooked according to package directions until just tender
  • 6 ounces salt pork, diced
  • 1/2 tsp.ground cumin
  • 1 tsp. black pepper
  • 1 tsp. garlic powder
  • 1 clove garlic, minced
  • 2 ripe med. tomatoes, chopped
  • 1/4 cup chopped onion
  • 1 bunch cilantro, minced
  • 1 can (8 ounces) tomato sauce
  • Salt to taste

Preparation:

In crockpot combine beans with salt pork, ground cumin, pepper, and garlic powder and minced. Add water to just cover. Cover and cook on LOW for 5 to 7 hours, or HIGH 2 1/2 to 4 hours, until beans are very tender. Add tomatoes and onions to beans along with cilantro and tomato sauce. Taste and add salt. Cook for 20 to 30 minutes longer, until hot.
