This hearty chili is made with lima beans, kidney beans, and Great Northern beans, along with ground beef, tomatoes, and seasonings. Using canned beans makes it a quick prep, and the slow cooker makes cooking nearly hands-free.

  • 2 tsp. vegetable oil
  • 1 1/2 lbs. ground beef
  • 1 sm. onion, chopped
  • 1/2 tsp. minced garlic
  • 1 (16 oz.) can red kidney beans
  • 1 (16 oz.) can lima beans or butter beans
  • 1 (16 oz.) can Great Northern beans
  • 1 (15 oz.) can tomatoes
  • 1 (15 oz.) can style tomato sauce
  • 2 tbsp. chili sauce or catsup
  • 1 tbsp. oregano
  • 1 tbsp. chili powder
  • 1 tsp. salt

Drain and rinse all beans. Brown ground beef with vegetable oil; drain. Add remaining ingredients to slow cooker. Cover and cook on low, stirring occasionally, for 5 to 7 hours.

This recipe is easy, delicious, and nutritious, Member wolter61

This recipe has become a family favorite. It's easy to throw together and a great way to include fiber in your family's diet. I cannot detect either the lima beans or butter beans (I usually gag to eat them by themselves), so this is a great way for me to eat those veggies. I also use ground turkey (or mix beef & turkey), olive oil instead of veg oil and I usually double the recipe because this freezes well. Whip up a batch of Jiffy mix corn muffins and you're good to go.
