Ingredients:
- 1/2 cup chopped onion
- 3 1/2 cups dry navy beans
- 1/2 cup packed brown sugar
- 8 to 12 ounces smoked diced ham or meaty ham bone
- 1/2 cup molasses
- 1 teaspoon salt
- 1/2 pound bacon
- 1 teaspoon dry mustard
Preparation:
Completely soften beans by soaking overnight and simmering, following package directions (beans should be soft before mixing with other ingredients). Drain, reserving 1 cup of cooking liquid. Put beans in slow cooker. Add all remaining ingredients along with the 1 cup reserved bean liquid; mix well. Cover and cook on LOW for 8 to 10 hours, stirring occasionally. If ham bone is used, remove and cut meat from bone. Add ham back to crockpot. If beans are too watery, cook on HIGH during last hour. Serves 6 to 8.
