Ground beef and black beans team up in this easy everyday meal. The beef and beans are seasoned with chili powder, tomatoes, and garlic, along with onions and peppers. Serve this dish with hot cooked rice or quinoa, and top it off with freshly chopped cilantro, slices of avocado and tomato. Ground turkey may be used in the recipe for a leaner bean mixture.

Feel free to turn up the heat with a few tablespoons of chopped jalapeño peppers or minced serrano pepper. A dash of cumin would add to the flavor as well.

Ingredients

  • 2 tablespoons vegetable oil

  • 1/2 pound extra-lean ground beef or ground turkey

  • 1 cup chopped onions

  • 1 cup chopped bell peppers

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 tablespoon prepared mustard

  • 1 teaspoon chili powder

  • 2 tablespoons soy sauce

  • Dash cayenne pepper

  • 1 cup tomato sauce

  • 2 cups cooked or canned black beans, rinsed and drained

  • Kosher salt, to taste

  • Freshly ground black pepper, to taste

  • Chopped fresh cilantro, optional garnish

  • 3 cups cooked rice

  • Sliced avocado, optional

  • Sliced tomato, for serving, optional

Steps to Make It

  1. Gather the ingredients.

  2. Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and onions and cook, stirring frequently until the beef is no longer pink. Add the bell peppers and garlic and continue cooking for 2 to 3 minutes.

  3. In a small bowl combine the lemon juice, mustard, chili powder, soy sauce, and cayenne pepper with a small amount of tomato sauce; whisk until thoroughly blended. Stir in the remaining tomato sauce and then add the sauce mixture to the ground beef in the skillet. Add the drained black beans and cook for 20 to 30 minutes. Taste and season with salt and freshly ground black pepper, as needed.

  4. Serve the ground beef and beans with hot cooked rice. Garnish with chopped fresh cilantro and avocado or tomato wedges, if desired.
