Beef and Black Beans

Beef and black beans with sausage.

Ingredients:

  • 1 lb dried black beans
  • 1 lb beef stew meat, cubed
  • 12 to 16 ounces smoked sausage (chorizo, kielbasa, etc.)
  • Salt and pepper to taste
  • 1 cup chopped onion

Preparation:

Soak beans overnight. Drain; put in Dutch oven or large kettle and cover with fresh water. Simmer beans for 45 minutes, until just tender. Pour beans and water into slow cooker.
Slice sausage. Brown beef with the sliced sausage. Drain off excess fat. Stir all ingredients into beans in slow cooker. Cook on low for 6 to 10 hours. Add more water if necessary.
