- 1 1/2 to 2 pounds lean beef stew meat
- 1 tablespoon oil
- 2 to 3 medium onions, coarsely chopped
- 2 to 3 tomatoes, chopped
- 1 cup baby carrots
- 3 cloves garlic, minced
- 2 tablespoons quick-cooking tapioca
- 1 cup beef broth
- 1/4 cup dry red wine or more beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 small zucchini, halved and sliced 1/4-inch thick
- 2 to 3 cups hot cooked rice
