Crockpot Beef Burrito

Basic crockpot burrito filling, made with a lean chuck roast, salsa, and chile peppers.

Ingredients:

  • lean chuck roast, approximately 3 pounds
  • salt and pepper and garlic to your taste
  • 2 cans (4 ounces each) chopped chile peppers
  • 1 cup chopped onion
  • 1 to 2 cups salsa

Preparation:

Salt and pepper chuck roast; put in slow cooker. Cover and cook on LOW for 8 to 10 hours. Add remaining ingredients; cover and cook on HIGH for 45 to 60 minutes longer. Serve with warm flour tortillas and garnishes, such as refried beans, grated cheese, sour cream, shredded lettuce, chopped tomatoes, and sliced olives.
Serves 6 to 8.
