Ingredients:
- 1 1/2 lbs. lean beef stew meat cut into 3/4-inch cubes
- 2 large onions, chopped (or use a bag of frozen onions)
- 4 cloves garlic, minced
- 2 (14-1/2 oz.) cans diced tomatoes with juice (I used the ones with chili seasoning)
- 2 (4-1/2 oz.) cans diced green chiles, drained
- 2 (8.5 oz.) cans whole kernel corn, undrained (I used Mexican corn)
- 1 tbs. dried oregano
- 2 tsp. ground cumin
- 1 tsp. salt (or to taste)
- 1/2 tsp. ground red pepper
- 4 tbs. yellow cornmeal
