Crockpot Beef and Chile Stew

Cook Time: 8 hours

Ingredients:

  • 1 1/2 lbs. lean beef stew meat cut into 3/4-inch cubes
  • 2 large onions, chopped (or use a bag of frozen onions)
  • 4 cloves garlic, minced
  • 2 (14-1/2 oz.) cans diced tomatoes with juice (I used the ones with chili seasoning)
  • 2 (4-1/2 oz.) cans diced green chiles, drained
  • 2 (8.5 oz.) cans whole kernel corn, undrained (I used Mexican corn)
  • 1 tbs. dried oregano
  • 2 tsp. ground cumin
  • 1 tsp. salt (or to taste)
  • 1/2 tsp. ground red pepper
  • 4 tbs. yellow cornmeal
