Crockpot Cider Beef Stew

This beef stew is made with stew beef, potatoes, carrots, and apple cider in the crockpot.

Cook Time: 9 hours

Ingredients:

  • 1 1/2 to 2 pounds lean beef stew meat
  • 8 carrots, sliced thin
  • 6 medium potatoes, sliced thin
  • 2 apples, chopped
  • 2 teaspoons salt
  • 1/2 teaspoon thyme
  • 1/2 cup chopped onion
  • 2 cups apple cider

Preparation:

Place carrots, potatoes, and apples in Crock Pot. Add meat and sprinkle with salt, thyme, and chopped onion. Pour cider over meat. Cover and cook on LOW heat for 8 to 10 hours. Thicken juices with a flour and cold water mixture (about 1 1/2 to 2 tablespoons flour and 2 tablespoons water), cooking on HIGH in slow cooker until thickened (or transfer to a large stockpot over medium heat and cook down juices then thicken.

Not an Ordinary Beef Stew FlavorNovember 19, 2007By grammy52851
"This is not an ordinary beef stew, its flavor is that of a bit sweet, but not desert sweet. Its fragrance fills the home with beefy but more tasteful than ordinary beef stew. I found it to be a great addition to my soup and stew recipes. Great on a cold day or night such as we are having here in Massachusetts, its 24 degrees F. I think because it is not strictly an adult tasting dish the kids will love it too. Not to cinnamon or cider tasting either, and the apples aren't even that noticeable. Very mellow flavoring but yummy. Very healthy, I added garlic to mine and a bit more cider. Just writing about it makes me hungry .."
