Mexican Style Beef and Pork Stew Recipe

This crockpot stew is made with beef and pork, along with garlic, chile peppers, raisins, lemon juice, and other spices and seasonings.

Total Time: 9 hours

Ingredients:

  • 1 1/2 pounds beef chuck roast, cut in 1-inch pieces
  • 1 1/2 pounds pork butt, cut in 1-inch pieces
  • 1 tablespoon butter
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 onions, chopped
  • 1 or more green chile peppers, seeded,chopped
  • 2 red bell pepper, chopped
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 2 cups tomatoes, chopped
  • 1/4 cup fresh lemon juice
  • 3/4 cup raisins
  • 1 cup whole blanched almonds, optional
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup dry red wine
  • 1/2 cup beef stock
