Southwest Beef Chile Stew

Ingredients:

  • 1 pound lean beef stew meat, cut into 1/2-inch cubes
  • 1 cup chopped onion
  • 2 cloves garlic, finely minced
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 2 cans (4 ounces each) diced green chiles, drained
  • 1 cup corn kernels
  • 1 1/2 teaspoons dried oregano leaves, crushed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 2 tablespoons yellow cornmeal

"The recipe was kind of bland for my taste. Perhaps because I only had mild chiles available. After I added a tbs of chile powder, a tsp of sugar, another tsp of salt, a half a tsp of black pepper and a 1/2 a cup of red wine it was great. It then rated at least 4 stars. I will make this again and will add about 4 oz of sliced fresh mushrooms."
