Slow Cooker Beef Stew with Potatoes and Tomatoes

this delicious slow cooked beef stew is flavored with tomatoes and tomato soup. Vegetables include carrots, onions, and celery.

Yield: Makes 6 to 8 Servings

Ingredients:

  • 2 lbs. beef sirloin or round, cut in cubes
  • 4 medium potatoes, cut in cubes
  • 3 carrots, cut in 1/2-inch slices
  • 2 cups sliced celery
  • 1 package frozen onions, about 10 ounces
  • 1 slice white bread, torn into small pieces
  • 1 (14.5 ounce) can whole tomatoes with juice
  • 2 tablespoons dried minced onion
  • 3 tbsp. quick cooking tapioca
  • 2 teaspoons sugar
  • 1 can (10 1/2 ounces) condensed tomato soup
  • salt to taste
  • pepper to taste

Preparation:

Place all ingredients in a 4 to 6-quart slow cooker; stir to blend.

Cover and cook on LOW for 7 to 9 hours.
