Mushrooms and red wine make this sirloin tips recipe a tasty and simple meal to prepare in the slow cooker.
Yield: Serves 4 to 6
Ingredients:
- 1 1/2 to 2 pounds sirloin tips, cubed
- 4 tablespoons flour, divided
- 1 tablespoon vegetable oil
- 6 to 8 ounces sliced mushrooms
- 1/2 cup beef broth
- 3/4 cup red wine
- 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
Preparation:
Toss beef cubes with 3 tablespoons of flour.
Heat oil in a large skillet over medium-high heat. Brown the beef on all sides; add mushrooms and cook, stirring, for about 4 minutes. Add the beef broth and wine; pour all into the slow cooker. Add the salt and pepper; cover and cook on LOW for 6 to 8 hours.
Remove the meat and set aside. Pour liquids into a medium saucepan and bring to a boil. Simmer briskly for about 5 minutes.
Combine the remaining 1 tablespoon of flour with about 1 tablespoon of cold water. Stir until smooth then stir into the simmering liquid. Cook, stirring, until thickened. Taste and adjust seasonings, if needed. Add the beef and mushrooms back to the liquids and heat through.
Serve with rice or potatoes.
