Slow cooker one-dish meals are a great dinnertime solution for a busy weeknight, and this creamy broccoli chicken is a recipe the whole family will love. Boneless chicken breasts, frozen broccoli, and condensed cream of broccoli soup are cooked together for several hours in the slow cooker, and toward the end of cooking time, milk is added. What results is a flavorful dish that is perfect served over mashed potatoes, angel hair pasta, or rice.
Keep in mind that cooking the broccoli in the slow cooker for several hours will make the vegetable very tender. If you prefer your broccoli with a more crisp texture, instead of adding it to the slow cooker steam it separately, following the package directions, and serve it along with the creamy chicken. Better yet, use fresh broccoli as it is firmer than frozen and won't cook as quickly.
This recipe calls for cream of broccoli soup to keep with a consistent flavor profile, but feel free to substitute with another type of condensed soup such as cream of mushroom, cream of chicken, or cream of celery. You can also make your own if you prefer not to use canned soup.

Cover and cook on low for 5 to 7 hours, or on high for about 3 hours.

If cooking on low, about 45 minutes before the chicken is done, add the milk. If cooking on high, add the milk 30 minutes before cooking time is finished.

Tip
Boneless chicken breasts will be dry if cooked too long, so check them after about 4 hours on low or 2 hours on high.
Can I use frozen chicken in the slow cooker?
Although there is some debate on the subject, food safety experts advise that we don't place frozen chicken in a slow cooker. Because the nature of a slow cooker is to cook slowly, it may take too long for the chicken to reach the safe temperature of 165 F, allowing time for bacteria to multiply. If you plan on making a chicken recipe in the slow cooker, make sure to defrost frozen chicken beforehand.
