Marinated Chicken and Pork

This marinated chicken recipe was shared by Betty C.

Ingredients:

  • 2 1/2 to 3 pounds chicken pieces
  • 3/4 to 1 pound lean pork loin or tenderloin, cubed
  • 1 cup dry red wine
  • 1/2 teaspoon black pepper
  • 3 cups beef broth
  • 2 cloves garlic, crushed
  • 3 tomatoes, chopped
  • 1/2 teaspoon rosemary
  • 1 teaspoon salt
  • hot cooked noodles

Preparation:

Place chicken pieces and pork cubes in a large bowl. Combine wine, pepper, beef broth, garlic, tomatoes, rosemary, and salt; pour over chicken and pork. Marinate for at least 2 to 3 hours in the refrigerator, or overnight.

Transfer chicken, pork, and marinade to crockpot. Cover and cook on HIGH for 30 minutes. Continue to cook on LOW for about 5 1/2 to 7 1/2 hours, or until chicken and pork are thoroughly cooked. Makes 6 servings.
