Serve this great tasting chicken with dressing or stuffing and potatoes or hot cooked rice.


  • 2 pounds boneless chicken breasts, skin removed
  • 1/2 cup chopped onion
  • 2 teaspoons vegetable oil
  • 2 teaspoons salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • dash ground allspice
  • 1 cup orange juice
  • 2 teaspoons finely grated orange peel
  • 2 cups fresh or frozen cranberries
  • 1/4 cup brown sugar


Brown chicken pieces and onion in oil; sprinkle with salt. Add browned chicken, onions and other ingredients to crockpot. Cover and cook on LOW 5 1/2 to 7 hours. If desired, thicken juices with a mixture of about 2 tablespoons cornstarch combined with 2 tablespoons cold water.

I chose this recipe simply because I wanted to use up the many bags of cranberries in the freezer. It turned out better than I was expecting. The tangy cranberry-orange flavour was delicious. I cut each chicken breast into thirds before browning. The chicken texture was definitely ""stewed"" when the cooking was done - it shredded easily with a fork and needed the sauce poured over top to return the juices and flavour to the meat. Served with white rice and green beans and lots of the sauce on top. Even our pickiest kid ate it! It was great the next day too.
