Sally's Chicken With Olives

This is an easy chicken dish, cooked in the slow cooker with olives and wine, along with herbs and garlic.

Cook Time: 7 minutes

Total Time: 7 minutes

Ingredients:

  • 4 boneless skinless breast halves or use bone-in
  • 1/2 cup wine (red or white or 1/4 cup of each)
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1-2 tablespoons oregano
  • 2 bay leaves
  • 4-6 cloves garlic, crushed
  • 1/2 to 1 teaspoon freshly ground pepper
  • 1 teaspoon salt
  • 2 tablespoons capers plus a little juice
  • 1/3-1/2 cup green olives
  • 1/3 cup dark brown sugar

Preparation:

Place chicken in crockpot. Mix together the remaining ingredients; pour over the top of the chicken. Cook on low for approximately 6 to 7 hours. The olives are really delicious after they've cooked for a while -- they're a little sweet from the brown sugar and they're just yummy! This chicken can be served cold as well.

Sweet meets salty, Member EatHealthy4Life

If you like a combination of sweet and salty, then you must make this recipe. My husband does not like green olives, and he still enjoyed this dish. It's easy to make and by far one of my favorite crock recipes. Yummy!
