This is an easy chicken dish, cooked in the slow cooker with olives and wine, along with herbs and garlic.
Cook Time: 7 minutes
Total Time: 7 minutes
Ingredients:
- 4 boneless skinless breast halves or use bone-in
- 1/2 cup wine (red or white or 1/4 cup of each)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1-2 tablespoons oregano
- 2 bay leaves
- 4-6 cloves garlic, crushed
- 1/2 to 1 teaspoon freshly ground pepper
- 1 teaspoon salt
- 2 tablespoons capers plus a little juice
- 1/3-1/2 cup green olives
- 1/3 cup dark brown sugar
Preparation:
Place chicken in crockpot. Mix together the remaining ingredients; pour over the top of the chicken. Cook on low for approximately 6 to 7
hours. The olives are really delicious after they've cooked for a
while -- they're a little sweet from the brown sugar and they're just
yummy! This chicken can be served cold as well.
