Ingredients:
- 1 broiler-fryer, about 3 to 3 1/2 pounds
- 1 rib celery, cut in 2-inch pieces
- 1 medium carrot, sliced
- 1 medium onion, cut in wedges
- 1 cup chicken broth
- 1 bay leaf
- salt and pepper, to taste
Preparation:
Wash the chicken and pat dry. Place it in the slow cooker; season with salt
and pepper. Place the celery, carrot and onion around the chicken. Pour in
the broth. Add the bay leaf. Cover and cook on LOW for 7 to 8 hours or
until the chicken is tender. Lift the chicken from the pot and let it cool
until it is cool enough to handle. Remove the meat from the chicken
and freeze or use right away.
Strain the broth and refrigerate, then skim off fat.
