Ingredients:

  • 2 pounds chicken breasts, boneless and skinless, cut in 1 to 1 1/2-inch pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, thinly sliced
  • 1 can (15 oz) white hominy, drained
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (28 oz) tomatillos, drained and chopped
  • 1 can (4 oz) mild green chiles

"Despite largely being a ""dump in the cans"" low effort of slow-cooker recipe, this is a hearty winner of a dish. Normally, I tend to tinker with recipes to get them to my tastes, but this one was great from the get-go. It may be a skosh spicy for some tastes, so offer sour cream and a bit of chopped cilantro as garnish for a nice cooling touch."
