Chicken Chili with Hominy

This chicken chili is a cinch to put together and cook in the slow cooker. Serve this chili with cornbread and a salad.

Cook Time: 4 hours

Total Time: 4 hours


  • 2 pounds chicken breasts, boneless and skinless, cut in 1 to 1 1/2-inch pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, thinly sliced
  • 1 can (15 oz) white hominy, drained
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (28 oz) tomatillos, drained and chopped
  • 1 can (4 oz) mild green chiles


Combine all ingredients in slow cooker; stir to blend all ingredients. Cover and cook on low for 7 to 9 hours, or high for 4 to 4 1/2 hours.
Serves 4 to 6.

I actually did not use the crock pot. I just cooked on stovetop and turned out well. Quick and easy. My family enjoyed it. I added grated cheese, corn chips and a couple slices of avocado to the top of each bowl. Thanks for the recipe.
