Chicken and Apple-Pecan Stuffing

Enjoy this tasty crockpot chicken recipe, made with stuffing mix and chopped apples.

Ingredients:

  • 4 to 6 boneless, skinless chicken breasts
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 cup chopped apple (about 1 apple)
  • 1/3 cup applesauce
  • 1/4 cup chopped pecans
  • 1 box Stove Top stuffing mix (6 oz)
  • 1/2 cup water
  • 1 can cream of chicken soup (Healthy Request or low fat)

Preparation:

Wash chicken breasts and pat dry; place in Crock Pot. Melt the butter in a skillet over medium low heat and saute the chopped onion, celery, and apple. Add pecans, water, applesauce, cream of chicken soup, and stuffing mix. Mix together; spoon over chicken in the Crock Pot. Cover and cook on low for 6 to 8 hours.
Serves 4.

A terrible disappointment. Apparently the same rule applies to food as it does other things; if the recipe sounds to good to be true, then it is. Despite the fact that it doesn't make much sense to let stuffing cook in a crock pot for hours upon hours, I followed the recipe anyways, only to find that the 6+ hours of cooking stuffing mixed with liquid gives you exactly what common sense says it should: a brown, soupy, unappealing mess. So soupy that you can't even enjoy the onions, celery, apples, and pecans you put into it. The only good thing is the chicken comes out tender. If you insist on using this recipe, then I suggest that immediately after cooking, you dispose of the brown gunk on top and try to enjoy the chicken. I will NOT be making this gain.
