Chicken and Apple-Pecan Stuffing

Enjoy this tasty crockpot chicken recipe, made with stuffing mix and chopped apples.


  • 4 to 6 boneless, skinless chicken breasts
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 cup chopped apple (about 1 apple)
  • 1/3 cup applesauce
  • 1/4 cup chopped pecans
  • 1 box Stove Top stuffing mix (6 oz)
  • 1/2 cup water
  • 1 can cream of chicken soup (Healthy Request or low fat)


Wash chicken breasts and pat dry; place in Crock Pot. Melt the butter in a skillet over medium low heat and saute the chopped onion, celery, and apple. Add pecans, water, applesauce, cream of chicken soup, and stuffing mix. Mix together; spoon over chicken in the Crock Pot. Cover and cook on low for 6 to 8 hours.
Serves 4.

I actually had success with this recipe using a 6 quart crock pot set on low. The stuffing wasn't soupy at all, rather a little dry around the edges. I left out the applesauce within the stuffing (I couldn't get the jar open!!) and served it on the side instead. My chicken wound up being a bit overcooked, so the stuffing was the better part of it.
