This flavorful chicken dish gets flavor from tomatoes and mushrooms, and bacon gives it a smoky flavor. Try this tasty chicken marengo recipe. Serve this chicken dish with rice or pasta for a fabulous everyday meal.
Yield: Serves 4
Ingredients:
- 3 to 4 pounds chicken parts, bone-in, skin removed
- 1 (14.5 oz) can diced tomatoes
- 1 medium onion, sliced
- 10 strips bacon, divided
- 1 (6 oz) can tomato paste
- 1 can (4 to 6 ounces) mushrooms, or use fresh sliced mushrooms
Preparation:
Spray sides and bottom of crock with non-stick spray or lightly grease sides. Place washed chicken
pieces in bottom of slow cooker. Scatter onion slices on top. Lay 5 slices of
bacon on top of chicken and onions. Add can of diced tomatoes (with
juice). Cook on high 1 hour then switch to low for 2 hours. Add can of
tomato paste and mushrooms. Cook on low about another hour. (My crock
tends to cook a bit fast on low, so you may need to adjust times).
Meanwhile, cook then crumble the remaining 5 slices of bacon, if desired.
When serving, sprinkle the crumbled bacon over top of chicken. We like to
serve over rice.
