Beer-Braised Chicken

Ingredients:

  • 4 to 6 boneless chicken breast halves
  • 1 can (12 ounces) beer
  • 1 cup chili sauce
  • 4 to 6 medium potatoes, peeled and cut in 2-inch chunks
  • 2 ribs celery, sliced
  • 4 carrots, peeled & sliced
  • 1 medium onion, sliced
  • 1/4 cup flour, mixed with a little cold water to make a smooth paste
  • fresh chopped parsley, to garnish, optional

I originally saw this recipe while looking for something I could do with chicken in the crock pot that I haven't done before. I read the first review only and thought this could be interesting! I started making it and decided to read other reviews. I saw that many complained about the acidity of the sauce and said it smelled like vomit. Well, this was true! Having made spaghetti/tomato sauces in the past and knowing my personal preferences, I used roughly a little more than 1/2 cup cocktail sauce and 3/4 cup mild salsa (I used PACE mild chunky due to the flavor) in place of the 1 cup of chili sauce. I also used a non-domestic beer for a sharper flavor (Stella Artois) and added about 3 tablespoons sugar to the mix in the crock pot. 1/4 cup milk and also a teaspoon of cayenne. Well, the mix no longer smelled like vomit! I put in the chicken breast halves and cooked on low for 7 hours. The house smelled great! My roommates were surprised at how good it was! Turned out a nice slightly sweet, but spiced (not hot) flavor and the chicken was just about falling apart.
