very versatile!May 25, 2009By meowzebub
"I've made this as written - good - and gussied up by subbing Camembert & Gruyere cheeses - beautiful! I was cleaning the fridge and found some of the Cheddar version & half a chicken panini from work. Brainstorm: Nouvelle ""Hot Brown""!!!! It was pretty good, but nothing to write home about. But the next time I made the recipe I used the French cheeses and while eating my pasta, kept thinking about panini. I made sure to bring one home the next day. Amazing! Be sure your sandwich has ripe tomato & some basil! I'll make this sauce just for the Hot Brown! Now, excuse me please; I have to put a panini press on my Amazon wish list. ;)"
