Cook Time: 6 hours
Ingredients:
- 6 to 8 flour tortillas
- 1 to 1 1/2 pounds ground beef
- 1/2 cup chopped bell pepper (green, red or combination)
- 1/2 cup chopped onion
- 1 can (4 ounces) mild chopped chile
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (16 oz) refried beans
- 1 jar (16 oz)salsa or chunky picante sauce
- 8 ounces shredded American process cheese or Kraft Classic Melts brand
Preparation:
In a large non-stick skillet over medium heat, brown ground beef; add peppers, onion, chile, chili powder, cumin, oregano, garlic powder, salt, pepper and refried beans. Mix and cook until vegetables are just tender.
Lightly grease bottom and sides of a 3 1/2- to 4-quart slow cooker/Crock Pot. Spread about 2 tablespoons of salsa in the bottom of slow cooker/Crock Pot. Place one flour tortilla on the salsa. Add about 3/4 cup of ground beef mixture on the tortilla. Top with one slice of tomato, 2 to 3 tablespoons salsa and a few tablespoons of shredded cheese. Repeat layers until ground beef mixture is used, ending with a flour tortilla. Top with the remaining salsa and cheese. Cover and cook on low for 5 to 6 hours.
