Cook Time: 6 hours
Ingredients:
- 1 pound lean ground beef
- 4 ounces mushrooms (optional)
- 1 bunch green onions (scallions), sliced
- 1/2 medium bell pepper, chopped
- 1 packet brown gravy mix
- 1 can (14.5oz) diced tomatoes with juice
- 1/2 teaspoon curry powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- dash cayenne pepper
- 1 cup converted rice (Uncle Ben's)
- 1 cup chicken broth or bouillon
Preparation:
In a non-stick skillet, brown ground beef with mushrooms, onions and bell pepper. Stir in gravy mix, tomatoes, curry powder, cinnamon, salt, and black and cayenne peppers. Spray crockery with cooking spray. Pour rice into the crockery; spoon ground beef mixture over the rice. Pour chicken broth over all. Cover and cook on low for 6 hours. Stir to blend about 30 minutes before done.Serves 4.
