Rustic Chicken

This flavorful hunter-style chicken dish is easy to prepare and cook in the slow cooker.


  • 1 to 1 1/2 pounds chicken breast tenders, or boneless chicken breasts cut in 1-inch strips
  • 1 tablespoon real bacon bits
  • 1 can diced tomatoes (15oz), drained
  • 1 can artichoke hearts, quartered (15oz)
  • 1 can sliced mushrooms (4oz), or 8 ounces fresh sliced
  • 1 packet dry chicken gravy mix (about 1 oz)
  • 1/4 cup red wine
  • 2 tablespoons Dijon mustard


Combine all ingredients in a 3 1/2-quart or larger slow cooker; stir to combine. Cover and cook on low 6 to 8 hours. Serve over pasta or rice.

I love using my crockpot and it is so hard to find good recipes aside from the standard chile fare. I followed this recipe as written with the exception of the canned mushrooms. I substituted fresh mushrooms and added them at the 5 and 1/2 hr mark (I cooked on low for 6 hours only and thought it was perfect). My DH commented that it tasted like something you would get at a restaurant. I served it over whole wheat rigatoni with rustic artisan bread and some grated reggiano parmagiano cheese. My only criticism is that it seemed to need a fresh flavor boost. I think fresh basil added just before serving would do the trick. Nice to have another good crockpot recipe!
