Crockpot Stuffed Cabbage

Cabbage rolls with ground beef and rice.

Ingredients:

  • 1 large head cabbage
  • 1 pound lean ground beef
  • 1/4 cup uncooked rice
  • 1 egg, beaten
  • 1/4 cup finely chopped onion
  • 1 small carrot, finely shredded
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup cider vinegar
  • 1/2 cup brown sugar
  • 8 oz. can tomato sauce

Preparation:

Mix ground beef, rice, egg, onion, carrot, salt and pepper. In a separate bowl, combine vinegar, brown sugar and tomato sauce. Drop cabbage in boiling water for 5 to 10 minutes, until leaves are somewhat wilted. Remove 10 to 12 large leaves. Core and chop remaining cabbage. Place in bottom of Crock Pot. Place 2 to 4 tablespoons of beef mixture in center of each leaf. Roll up and secture with toothpicks; place rolls in crockpot. Pour tomato mixture over cabbage rolls. Cover and cook on low for 8 to 10 hours. Serves 6 to 8.

"I was really disappointed at how this came out. It needed a lot more sauce. I cooked it on low for 10 hrs. The cabbage rolls that weren't covered were black and inedible. The ones that had been covered were ok. The sauce had a nice flavor."
