Ingredients:
- 1 pound extra-lean ground beef
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1 can (10 1/2 ounces) condensed French onion soup
- 1 can (10 1/2 ounces) condensed beef broth
- 1 cup water
- 1 can (14.5 ounces) zesty chili-seasoned diced tomatoes or fire-roasted tomatoes
- 1 1/2 to 2 cups frozen mixed vegetables
Preparation:
Transfer the beef and onion mixture to a 4 to 6 quart slow cooker. Add onion soup, beef broth, water, and tomatoes. Cover and cook on LOW for 4 to 6 hours. Add frozen mixed vegetables; continue cooking on LOW for 30 to 45 minutes, until vegetables are tender.
Serves 4 to 6.
