This is an easy soup to prepare, and the slow cooker makes it a no-fuss meal. Serve this tasty soup with cornbread or biscuits for a good everyday family meal.


  • 1 pound extra-lean ground beef
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1 can (10 1/2 ounces) condensed French onion soup
  • 1 can (10 1/2 ounces) condensed beef broth
  • 1 cup water
  • 1 can (14.5 ounces) zesty chili-seasoned diced tomatoes or fire-roasted tomatoes
  • 1 1/2 to 2 cups frozen mixed vegetables


In a large skillet, sauté the ground beef in olive oil with onion and celery until beef is no longer pink.

Transfer the beef and onion mixture to a 4 to 6 quart slow cooker. Add onion soup, beef broth, water, and tomatoes. Cover and cook on LOW for 4 to 6 hours. Add frozen mixed vegetables; continue cooking on LOW for 30 to 45 minutes, until vegetables are tender.
Serves 4 to 6.
