Slow Cooker Porcupine Meatballs


These easy porcupine meatballs are cooked in the slow cooker with a simple tomato sauce.


  • 1 pound lean ground beef & 1 pound lean pork, or use all beef
  • 1 beaten egg
  • 1/2 c. milk
  • 2/3 c. rice (raw)
  • 1 tsp. salt
  • Sauce:
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup water or chicken broth
  • 2 tbsp. chopped onion
  • 1 tsp. salt
  • 1 tsp. dried leaf basil


Combine ground meats; add egg, milk, rice and salt. Form into 1 1/2 inch balls; brown in a large skillet sprayed with non-stick cooking spray or add a little oil to the skillet. Combine tomatoes, sauce, water or broth, onion, salt, basil and bay leaf. Drain excess grease from meatballs and add to sauce mixture. Cover and cook for 7 to 9 hours on low.
Serves 6.
