Thai-Style Pork Stew

Ingredients:

  • 1 pork loin roast, about 2 to 2 1/2 pounds, cut in 4 or 5 pieces
  • 1 cup red bell pepper strips
  • 1 cup frozen green beans, thawed
  • 1/4 cup teriyaki sauce
  • 2 tablespoons white wine vinegar
  • 1 teaspoon crushed red pepper, or less
  • 2 garlic cloves, minced
  • 1/4 cup creamy peanut butter
  • 6 cups hot cooked basmati rice
  • 1/2 cup chopped green onions
  • 3 tablespoons chopped, dry-roasted peanuts

Preparation:

Trim fat from pork loin. Place pork, bell pepper, green beans,teriyaki sauce, vinegar, red pepper, and garlic in crockpot. Cover and cook on LOW for 8 hours. Remove pork and chop. Add the peanut butter to liquid in slow cooker; stir until well blended. Stir in the chopped pork.
Combine stew and the hot cooked rice in a large serving bowl or individual bowls, topped with chopped green onions and chopped peanuts. Serves 8.

Disappointing, Member entropy21

This seemed like an easy Thai slant to crock pot cooking. Unfortunately, it didn't really turn out. Not enough sauce, pork was dry, and I have no idea why the beans go in at the beginning. It wasn't bad, it just wasn't very good. I can imagine several things that may improve the recipe. However, with the wonderful selection of more proven choices, I'd rather move on.
