Ingredients:

  • 3 to 4 pounds boneless pork loin roast, trimmed
  • 2 garlic cloves, minced
  • 2 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon oregano
  • 1 can green chile peppers, chopped
  • 2 teaspoons salt, or to taste
  • 2 cans (15 ounces each) pinto beans, rinsed and drained

  • Topping:
  • Grated cheese
  • Chopped onions
  • Tomatoes
  • Lettuce
  • Sour cream
  • Coarsely crushed tortilla chips

"I have tried quite a few crockpot recipes on this site for my picky family & they all loved these ""chalupas"" I made. They aren't traditional chalupas if that is what you are looking for, but whatever it is, it sure is tasty! I called it my hot loins recipe, ha ha. Instead of crushing the tortilla chips like they asked I just warmed up flour & corn tortillas and grated cheese & chopped up tomatoes (sprinkled with a little oregano) and sliced up some lettuce as toppings, sour cream too & ate it like a soft taco. A little bit messy but super easy to make and a hit with my finicky family's tastes. I'm making it again for dinner tonight."
