Pork Tenderloin with Apples

Ingredients:

  • 1 package pork tenderloins, about 1 1/2 to 2 pounds
  • 1 large (or 2 small) Granny Smith apple, chopped
  • 1/4 cup applesauce
  • 1 bunch green onions with about 3 inches of green tops, slice thinly
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar (or cider vinegar)

Preparation:

Trim excess fat from the pork and slice in 1 1/2-inch pieces. Place pork slices in the slow cooker/Crock Pot with the remaining ingredients, mixing to combine. Cover and cook on low for 7 to 9 hours.
Serves 4 to 6.

"I found this recipe lacking in pizazz. Need to add parsley or yogurt or something to dress it up before serving, and keep it from looking like chunks of brown mystery meat in the school cafeteria. The sauce is very thin..... I added cornstarch at end to try to thicken it, but it was still watery. I served this dish with poppy seed noodles, sauerkraut on the side, a nice salad with German style dressing, and a Riesling, trying for an Oktoberfest theme. Next time I'll forget the crock pot and just do pork tenderloin with apples in the oven or in a skillet."
